You will encounter one such recipe later in the book. Those three base ingredients are best thought of as the canvas on which to create a cornucopia of varying crafts. Biscuits and rolls, waffles and scones, crackers and crusts — all of these take the basic three (sometimes using a different liquid in place of water) with a few additional ingredients to make a myriad of tastes and textures. Breakfast Zucchini Waffles Breakfast is a meal that doesn’t generally include many veggies. But during zucchini and summer squash season, this is one way to turn extra zucchini (which you’re likely to have on hand!) into something amazing and add some veggies into your meal plan. We’ll often preserve some at the height of season by freezing shredded zucchini spread on a parchment-lined tray. Lunch Crackers Another easy lunch addition is crackers, though we often eat these as snacks or for dinner. They are amazingly expensive — basic organic crackers run about 8 dollars per pound, while specialty ones are double that! Also, crackers are an excellent beginning recipe when your starter is young and so are you when it comes to sourdough! Dinner Empanadas This is quite possibly my favorite easy out-of-the-fridge-or-freezer food. While in the dinner section, these are an absolutely amazing on-the-go lunch option. Two or three empanadas make a decent meal all by themselves, no sides needed. These freeze excellently as well, so you can do a large batch and have them for that emergency lunch or dinner option that lets you skip having to eat fast food. Snacks and Special Treats Cast Iron Skillet Cinnamon Rolls If muffins are an easy mainstay, cinnamon rolls are a celebration kind of treat. Not an everyday item, but something to break out around holidays and other special occasions, or just as a special treat whenever wanted! We adapted this recipe from one at Cultures for Health — when we saw that their recipe was cooked in a cast iron skillet we figured it would be a good one. Resources Here we mention the particular brands of kitchen equipment we currently employ. Note, many, if not most, are used for other purposes beyond sourdough. Bread pans also make great meatloaf. Cookie sheets let us bake chicken nuggets, crackers, cookies, and more. Since we cook a great deal, we invest in quality and have never regretted that choice!
