As a result, the air fryer cooks food quickly and does an excellent job of making the exterior dry, browned, and crispy while keeping the interior moist and juicy. A Note on Salt Salt is one of the most important ingredients in all of cooking. Whenever I call for salt in this book, I mean a coarse salt like kosher salt or coarse sea salt, not table salt, which is iodized to prevent clumping. When using your air fryer, there are a few general principles to follow to ensure that you get deliciously consistent results: Don’t Overfill the Basket. Dry Batter, Not Wet. Use a Little Bit of Oil (But Not EVOO). Preheat. Don’t Overcook. Accessories. Country¯Fried Steak with Onion Gravy Country-fried steak, also known as chicken-fried steak, is the very definition of a guilty pleasure. Unless, of course, you make it in the air fryer, in which case it is nearly guilt free. The air fryer turns out a flavorful, tender steak with a crispy coating that rivals any diner’s version of this iconic dish and without any oil. I recommend starting with tenderized cube steaks for best results. Monte Cristo Sandwich The Monte Cristo sandwich is an old-fashioned, classic diner-menu item. It is a combination of a grilled ham and cheese sandwich and French toast and is somewhat related to the classic French café sandwich, the croque monsieur. The diner version of a Monte Cristo is cooked in copious amounts of butter, which makes an already heavy dish even heavier. The air fryer version, however, needs just a spray of oil. Avocado Fries with Pomegranate Molasses It would have never occurred to me to bread and fry slices of avocado before I purchased my air fryer, but now this is my new favorite way to eat avocado. These avocado fries are so simple that older kids and teens can make them by themselves for a healthy yet irresistibly tasty snack.
