Easy Chicken Manicotti submitted by Becky Holsinger of Belpre, OH "Although I love to cook, I don’t claim to be all that great at it. I was given this recipe when I got married and not only is it easy, it tastes great! I know when I make this dish it will be good, no matter what." Directions: In a bowl, mix pasta sauce and water. Spread 1/3 of sauce mixture in an ungreased 13"x9" glass baking pan; set aside. Sprinkle chicken with seasonings. Insert one chicken tender into each uncooked manicotti shell, stuffing from each end, if necessary. Arrange shells over sauce mixture in baking pan. Pour remaining sauce mixture evenly over shells, covering completely. Cover with aluminum foil. Bake at 350 degrees for about one hour, until shells are tender and chicken is no longer pink in the center. Top with cheese. Bake, uncovered, for 5 minutes, or until cheese is melted. Garnish with herbs, if desired. Serves 5 to 7. Ingredients: 26-oz. jar pasta sauce 1/2 c. water 10 boneless, skinless chicken tenders 1 t. garlic salt 1/2 t. Italian seasoning 10 manicotti pasta shells, uncooked 8-oz. pkg. shredded mozzarella cheese Optional: chopped fresh basil and oregano Flavorful idea! For extra-special pancakes or French toast, top with homemade maple butter...it's so easy to make! Just blend 1/2 cup butter with 3/4 cup maple syrup. Need a new dish? Shopping for a new casserole dish? Consider getting a deep 13"x9" glass baking pan. It retails heat well to create crisp golden crusts, cleans up easily and can be used for both savory mains and sweet desserts.
