Cooking at home leaves a lighter carbon footprint, especially if you bring your own bags when you grocery shop. Learning to cook is an instant mood elevator It may sound dramatic, but it’s true. If everI’m a little down, nothing picks me up faster than getting in front of the stove and making something good to eat for myself or someone else. Making your own food is better for you Meals cooked at home are almost always better for you—lower in calories, unhealthy fats, sugar, and sodium—than food from restaurants. As a result, the people who eat home-cooked food are less likely to be overweight and more likely to be healthier. You can feed your friends! Whether it’s a batch of cupcakes or a pan of mac and cheese, making food for friends is one of the best ways I know to care for the people you like or even love. Yes, you can feed friends with pizza delivery, but consider how much more fun it might be to make your own pizza and maybe a salad to go with it. Invite your pals to pitch in and see for yourself why homemade food is so much better than anything that arrives in a box. In this book you'll find basic lessons on foundational cooking skills and delicious everyday recipes to get you comfortable in the kitchen. Prep includes ten different recipe chapters that collectively cover a broad range of culinary know-how: eggs, grains, pasta, beans, salads, and vegetables, as well as meat, chicken, and fish. You'll also find chapters on Snacks and Little Meals, Food to Share, and Sweets. Each chapter has five recipes, just enough to give you a foundation from which to keep on cooking. I really believe that if you cook at least one dish from each chapter, you’ll develop skills to apply to other recipes like it. For example, make the Genius Spaghetti and Tomato Sauce and you might be able to tackle your dad’s favorite pasta dish. Or bake the One-Bowl Chocolate Chip Cookies in the Sweets chapter and you’ll have no problem knocking out a batch of your grandma’s snickerdoodles. I promise you don’t have to know anything about cooking in order to get started. You just have to be willing to try, to expect a few fumbles along the way, and, ultimately, to eat some really good food.
