Directions: In a saucepan over medium heat, cook carrots in salted water until almost tender; drain and rinse. Combine remaining ingredients in a separate saucepan. Bring to a boil over medium heat, stirring until thoroughly blended. Pour soup mixture over carrots. Cover and refrigerate until flavor is absorbed, at least 24 hours. Makes 10 to 12 servings Ingredients: 2 lbs. carrots, peeled and sliced 1 green pepper, thinly sliced | 1 onion, chopped 10-3/4 oz. can tomato soup 1/2 c. oil 3/4 to 1 c. sugar 3/4 c. cider vinegar | 1 t.
