EQUIPMENT BASICS Step into any well-stocked homebrew shop and prepare yourself to be dazzled by all the stainless steel and gadgets. Once you have put together your homebrewery, you can add as many extras as you want as you move forward with the hobby, or you can (like many experienced homebrewers) just keep it simple—it’s up to you! An auto-siphon makes starting a transfer much easier. Place your tubing on the bottom of the receiving vessel to minimize splashing and oxygen pickup. Try to transfer all the beer but not the sediment layer on the bottom of the vessel. You can use the bottom of the bottle wand and/or a clamp to stop the flow of beer to the bottle The space the wand takes up while filling will leave you with an appropriate amount of headspace once the wand is removed. Place your bottles on a sturdy, level surface when capping. It will be easy to tell if your bottle is perfectly capped or not—there’s no gray area when capping!
