Sample Recipe: Slow-Cooked Indian Spiced Brisket Gosht Assado Prep time: 5 minutes / Cook time: 8 hours on low or 6 hours on high / Serves 6-8 1. Heat the slow cooker to high or sauté, and add the oil. Stir in the onions and cook until they soften. Then add the chile, garlic, and ginger, and stir. 2. Add the garam masala, turmeric, cumin seeds, coriander seeds, and tomatoes, and mix. Then pour in the water and add the beef brisket. 3. Cover and cook on low for 8 hours, or on high for 6 hours, until the meat is tender. Remove the meat from the pan and cover it with foil to keep warm. 4. Using an immersion or regular blender, purée the juices and either simmer them on high, uncovered in the slow cooker, or transfer to the stovetop to produce a glaze (about 5 minutes). 5. Pull the meat apart with two forks and place on a platter. Pour the glaze over the meat and mix through. Garnish with fresh coriander leaves, sliced chiles, and scallions. Easy Adjustment: You can add 1 tablespoon of honey to the glaze to thicken it, which also adds a dash of sweetness.
