Plus they are an easy way to sneak in fat and veggies to hit those macros. When my husband and I first got married, he refused to eat any kind of casserole. Now, my Spinach Artichoke Chicken Casserole (page 88) is one of his favorite meals! Using your Instant Pot to make casseroles is not as hard as it may seem. Two simple steps, and you’re on your way to a delicious, healthy, and satisfying meal. Your Instant Pot will give your oven a break and let you spend extra time with the ones you love! DECONSTRUCTED EGG ROLLS WITH PEANUT SAUCE Beef Of all the animal proteins, beef is my absolute favorite. I love a juicy steak just as much as a meatloaf. Beef has so much flavor, especially when you purchase grassfed meat, and it is also an excellent food choice on a ketogenic diet. Beef is full of healthy fat and protein, which makes it ideal for meeting those macros. Use your Instant Pot as the perfect vessel for juicy, flavorful, and tender cuts of beef every time. SALISBURY STEAK Poultry, Pork, and Seafood Chicken, pork, and seafood may be lean sources of protein, but they’re fierce competitors for your Instant Pot! Though they’re lower in fat, chicken, pork, and seafood make excellent choices when following a ketogenic diet. With the right pairings, they can provide a plentiful amount of healthy fat and protein. This chapter is full of recipes that are foolproof for those times you need a break from red meat. COFFEE-RUBBED PULLED PORK Side Dishes Forget the turkey—at Thanksgiving, I’m all about the side dishes! With the Instant Pot, there’s no need to wait for November to roll around. In this chapter, several Southern classics get a keto makeover, including my favorite, Southern “Corn Bread” Dressing (page 166). It’s a secret family recipe, though, so shhh, don’t tell anyone! Side dishes and vegetables are also a great way to sneak in extra fat when needed. Using a steamer basket or small casserole dish in your Instant Pot will make your veggies taste like they’ve been slow cooking all day! MAPLE BACON CORN BREAD Desserts Dessert. Must I really say more? I was born with a major affinity for the sweeter things in life, specifically crème brûlée. When I first received my Instant Pot, I was amazed that I could use it to make dessert! Following a ketogenic diet hasn’t stopped me from enjoying a keto-friendly sweet treat on occasion . . . okay . . . on the regular.
