Remove the roast from the grill.Place a cast-iron skillet on the grill grate and increase the grill’s temperature to 450°F. Place the roast in the skillet, add the butter, and cook until its internal temperature reaches 145°F, flipping once after about 3 minutes. (I recommend reverse-searing the meat over an open flame rather than in the cast-iron skillet, if your grill has that option.)Remove the food you roast from the grill and let it rest for 10 to 15 minutes, before slicing and serving.
