Toast shredded coconut in a nonstick skillet over medium-high heat for 4 to 6 minutes, or until golden brown. Stir constantly. (The more you stir, the more evenly the coconut will toast.) Immediately transfer to a plate. When cool, store in an airtight container for up to a month.
