Place the herb sprigs inside the chicken cavity and truss the chicken if desired. 4. Brush the chicken with the coconut oil. 5. Generously sprinkle the chicken with the Italian seasoning, salt, and pepper (if using). 6. Roast for 90 minutes, or until the chicken is fully cooked and its juices run clear. If you use a meat thermometer, insert it into the thickest part of the thigh without touching the bone. The temperature should be at least 165°F. 7. Remove the chicken from the oven and let it rest for 10 minutes before cutting and serving.
